Darling Aviary in Downtown Sacramento believes we need to do our part to protect our environment and reduce our impact on the planet. Our menu options include ingredients sourced from local growers and sustainable suppliers. In sourcing menu options from local suppliers and implementing farm-to-fork initiatives, we are reducing our carbon footprint and overall impact on the environment. Head Chef Jonah and bar staff have been at the forefront of our push to reduce our impact. We place an emphasis on “nose-to-tail” and “root-to-fruit” menu options, meaning we focus and prioritize using each and every ingredient to its fullest extent. We create timeless and tasteful menu options in this manner without sacrificing the quality and taste of your final dish and drink. Our bar staff follows the same practices implemented by our Head Chef. We use many of the very same ingredients from our kitchen to detail and decorate our drinks. As such, we create drink options aimed at reducing overall waste and harmful byproducts.
